I know what you're thinking, not another recipe for vegan macaroni cheese! The internet is swimming with them! Who needs another one? But let me assure you, this is the cheesiest, easiest mac & cheese ever, and as much as I love mac & cheese made with cashews, roasted red peppers, tofu and all sorts of amazing ingredients, sometimes I just want something simple and satisfying that comes together in minutes.
This is the ultimate comfort food, and I love to serve it slathered with homemade Chili sin Carne and some avocado for a real stick-to-your-ribs treat.
Super Cheesy Easy Mac & Cheese
Recipe adapted from Veganomicon
3Tbsp (heaped) vegan butter
4Tbsp (heaped) plain flour
2C almond milk
1/3C nutritional yeast
1tsp garlic powder
1tsp onion powder
1C (heaped) grated vegan cheese*
Salt to taste
Boil the macaroni according to the package instructions while you make the sauce.
In a medium pan over a medium heat melt the butter. Add the flour and whisk until a thick paste forms. Add the almond milk in 1/3C increments, whisking well after each addition to form a thick but smooth sauce. Add the nutritional yeast, garlic & onion and vegan cheese and whisk until everything is melted together and smooth. (You may need to add a dash of almond milk to help the cheese to incorporate into the sauce.) Season to taste and drain the pasta.
Return the pasta to the pan and pour over the cheesy sauce. Fold the sauce into the pasta until each piece is coated and serve.
*I use Tesco's Soya Smoked Cheese for this recipe as I love the cheddar-like taste it gives the sauce, but feel free to use your favorite vegan cheese!
